I didn’t exactly like it, but I valued the theory behind it really. My second pick of the night time, but I probably wouldn’t obtain it again. Santa Barbara Sea Urchin: Uni mousse, kuidashi else, tonka bean. And lastly, the one, something I order when it is on the menu always. Tonite actually I was tempted never to order it, since it was Santa Barbara uni, and it seemed silly to order that whenever in Boston. And there have been so many other great-sounding dishes on the menu.

I’m a sucker for just about any type of savory uni like custard/pudding/etc. Presentation-wise, this was unattractive yet stunning at the same time. I loved the way the shredded form resembled the spikes on a genuine urchin. Not sure if that was intentional, but it worked well for me personally really. I’m not sure what size part of that one I finished up with. I was expecting a single lobe of one, topped with a dollop of uni mousse perhaps.
Or maybe no full piece whatsoever, a mousse with toppings just. Instead, I got a large plate of mousse, topped with tons of use. I think this was the full serving, I can’t imagine that it wasn’t, given how much use there is. My thing is that they didn’t really have a way to create a single serve from it.
So, I want to describe. Underneath the shredded nori was an insane amount of use. There were at least 4 full lobes, I think 6 actually. It had been decent unit, but not impressive particularly. So, good in that it didn’t taste off, which one can often, but it also wasn’t striking. Since I used to be eating this all myself, it turned out to be too much and actually. I know that sounds a bit crazy, but close to the final end, I was sorta just wishing it was gone.
